There’s good reason why Aligoté is the white wine accompanied by a splash of the syrupy sweet, locally produced crême de cassis which serves as the base for the well known Burgundian apéritif Kir. It’s the same reason why Burgundy’s second white grape is the principal grape in Burgundy’s Crémant de Bourgogne: Aligoté produces a high acid wine which benefits from the company of the cassis liquor or works well as the base for a sparkling wine which is going to receive a dose of sugary syrup to help with balance.
Pavelot’s old-vine Aligoté, planted in A.O.C. Pernand-Vergelesses parcels in the 1950s, is a wine which does not need the assist of cassis in order to be appreciated. It is raised exclusively in tank and bottled just before the following year’s harvest.
Lemon, apricot, pear and licorice spice alongside a creamy texture on the palate round out crisp citrus notes and birght acidity. The whole is underscored by a subtle minerality and surprising length at the finish. Delightful as an apéritif but which could just as easily make itself at home at the table alongside a variety of plates.
