Flavien Nowack is a curious young man on a personal mission to elaborate the individual parcels of his native Vandières, in the Vallée de la Marne, while also exploring the rich terroir diversity in the Champagne region. With this objective in mind, he has created a second range in his portfolio, Cru d’Origine, of purchased fruit from a single village, a different village selected each year. So that he might capture the truest expression of each village, he strives to add nothing but the fruit from that village in the elabortion of each wine: no concentrated grape musts for the fermentation in bottle but rather, unfermented grape juice and only cork enclosures during the élevage sur latte. An experiment which will inform his direction on the production of all his wines moving forward. In 2013 he begins this exploration from a selection of parcels in his home village of Vandières.
