Anytime a vigneron enters into his vineyard to perform any activity, plowing, pluning, debudding, etc, there is history and experience to guide the timing of these habitual activities but there is always risk as well. Such activity may or may not be exactly what the vine wants at that moment. Vercingetorix, the Gaulist commander who led a revolt against the Roman army in 50 BC was a risk taker as well.
Hats off to Vincent Gaudry for his Pinot Noirs are a stunning examples of purity and silky texture. Transparent and translucent Pinot Noir in his cuvée Vincengétorix that is flat out gorgeous. Sur le fruit, as the French would say. Cherry distillate and subtle notes of black tea and a cool mineral edge. It is all about suppleness and silk on the palate.
