From in the 2007 vintage, Dominique began isolating a tiny section of Chardonnay to craft this singular Blanc de Blancs and placing the accent on the Kimmeridgian, limestone based soils of the region which are a perfect companion to the Chardonnay grape. It is interesting to recall that the Côte des Bars is just a short distance to the east of Chablis and lying on the same band of Kimmeridian limestone.
The NV Extra Brut Éloquence, a blend of equal parts 2011 and 2010 Chardonnay, boasts striking aromatic nuance and lift, although it is a bit less expressive on the palate. White flowers, lemon peel, mint and white pepper are some of the signatures, while distinctly mineral-inflected veins of salinity recall the wines of Chablis, whose vineyards are closer to the Aube than those of the central Champagne districts.
